it looks good and fresh, but just wondering are all the teams going to join up at one point and be like FF6 or are they going to meet up at different times and fight each other?

They all join up back at Bowser's castle later. You control one of the three groups at a time in the scene.

Will you later on be able to take one party to a level, complete what you can with them, and then take the other through to complete things you needed their field capabilities for?

You mean the main levels or side stuff?
Because Mario and Co. can revisit Cheddar Desert and do stuff Kammy and Co. couldn't do. There will be other examples like that.
